Flourless Orange Cake



The most perfectly moist and refreshing cake that I've ever eaten. And that's a big statement to make, I know. But honestly, everyone who eats this cake - loves it. It's a restaurant quality cake with an almost pudding-like texture. Delicious with cream or ice cream, or just on it's own too.

Made with almond meal, oranges (real ones of course - you boil them down; no extract here!), eggs, sugar and vanilla - it's a relatively "healthy" cake too. Surely the nuts, fruit and eggs count as healthy foods? Once baked you smear the outside with a good quality apricot jam (I use one with no added sugar), and I like to decorate the cake further with slivered almonds and a big slice of orange. It's completely gluten free too, which makes it a good kind of cake to bring to work parties and the like - where a mix of people with varying food requirements will be eating.

This recipe was given to me by my Mum, and I have no idea where she got it. So I probably shouldn't pass it on without her permission. But here are some similar recipes online: here, and here. Though mine has more eggs...I suppose there are plenty of variations of the same cake, and I bet they're all quite tasty.
